It all started on Friday when I tried to make the icing. After carving the truck, I made the icing, but noticed right away that it wasn't smooth and fluffy. I ended up making another batch which was better, but still not good. The longer I worked on the cake the worse the icing got. I decided to go online and find a high humidity icing recipe. I used it on the top of the tank, but will never make it again. It was like paste and I literally pressed and molded it on. I wanted to add more details to the truck, but was having so much trouble, I finally surrendered and called it quits. The cake itself tasted really good, but let's just say it wasn't my best. Thank goodness Mason is only 4 because he was impressed and loved it. The smile on his face...priceless!

Happy 4th Birthday Mason!
We celebrated Mason's 4th Birthday today. The heat and humidity was horrible and wreaked havoc on the cake I made him.
