Mike's Birthday Pie
Mike's birthday is this Friday and I wanted to bake him something special. He loves coconut pie, but in the 29 years we have been married, I have only made one. The first time was such a disaster that I made a decision to leave the pie making to my Mom and Mother-in-law. Now that so many years have passed, it was time to try it again. I found my recipe on the Taste of Home website. Looks good, huh?

Just took a second look at your pie and was wondering...how did you get that crust to look so good?? ;)
Darn, you saw how I cheated...I knew I should have put that frozen shell into my Longaberger pie plate!
